Recommended Add-ons

Make It Your Own

  • Ramen egg (soft-boiled, soy-marinated if you’re feeling fancy)

  • Baby spinach / pak choi / spring greens

  • Spring onion + sesame

  • Chilli oil if you like it loud

For the ultimate experience, add a ramen egg also known as ajitama (soy sauce-marinated boiled egg) will liven your ramen and transport your tastebuds to Japan.

AJITAMA (RAMEN EGG) RECIPE

3 or 4 Eggs
3Tbsp Soy Sauce

3Tbsp Sake
2Tbsp Mirin
1Tbsp Sugar

  1. Use a pot to bring water to boil.

  2. From boil, add cold fridge eggs into pot for 7 minutes. Continously stir first for 3 minutes to center the egg yolk. If you prefer a firmer egg yolk, add 1 - 2 minutes cooking time.

  3. Remove eggs immediately and submerge into ice water and peel when cooled.

  4. Cook the rest of the ingredients in a small pot, and boil for a minute. Let cool.

  5. Submerge peeled eggs in the sauce in a plastic bag with a zipper and marinate in the fridge for a few hours, or optimally overnight.

Ajitama eggs are also a great addition to bentos and rice bowls when made in advance.
